I am Kitchen-mom (as it's the best and most effective way for me to give since i cant contribute financially)
there has been strong rumblings from Ben about wanting meat meat meat and organic/bio everything. How nice, and impossible.
So I think I will try to make a variety of Seitan based dishes to facilitate the desire for "meat".
Today I looked more closely at SeitanisMyMotor which has some inspirational images (from Hans Wurst restaurant).
This past weekend I bumped in to Steven (part of a German/Ami couple I thought were 'hot' back when we had the Berlin Faerie Cabaret at BarbieDeinhof). We ended up chatting about food at a mutual faerie's BDay party at Claudiastrasse.
I sent him my successful basic recipe this morning:
I get my "Gluten Mehl/ Gluten Flour" at Mehlstuebchen, Leberstr.28 at 3,20Euros per Kilo (though it has the gluten removed it is not called or labled Glutenlos-I guess not to confuse it with all the products that are made for gluten intolerant people).
My basic recipe (which is a rift from a Seitan cornbeef recipe )
Dry1cp glutenmehl3tbsp Nut.yeast(optional) OnionPowder+ground cloves, ground carroway, pepper
Wet (*room temp)1/2'cup" broth1/4cup soysauce or maggisossetbsp Olive oil *i put a tad of sesamöl too2 garlic cloves
Stir dry together
then mix wet INTO dry
knead and cut (or pull apart) into 4-6 pieces or what ever size you want them in.
put in a simmering broth (1hour!) of your choice (not boiling- to avoid "rubber" seitan) ie;4cps broth,4 cps water 1/2cp soy sauce
if you think you'll want a asian flavor you might use ginger -or- oregano/time etc for more western
For the fish taste.I avoided cloves, carroway etc.
Lightened the use of soysauce by diluting the full quantity.
I used sunflower oil rather than olive.
I chopped up a sushiBlat and added a tiny tiny tiny drop amount of liquidsmoke and similar amount of sesame oil with the sunflower.
I am not convinced at what "shape" the seitan should be- but it was not unsightly as I had assumed. The use of the dried shrimp powder was good but too pungent for that light fish taste.
Part of this concern is about frugality/saving or using only the small money I have to eat and live.
But part of the motivation is also to reject the dictates of social must-haves ie with clothes restaurants homes etc.
For example here are some recipes and 40 ways to use Baking Soda that are DIY and outside of the world of brands/marks royalties and so on. And homemade beauty products like facial muds from oatmeal. Or Homemade toothpaste:
1 teaspoon baking soda1/2 teaspoon sea salt, finely ground1 drop peppermint, spearmint, sweet orange, clove, or cinnamon bark essential oilA few drops tap waterCombine ingredients in a small bowl and mix them thoroughly with a toothbrush, your finger, or a small spoon until a smooth, thick paste forms. The paste shouldn’t be too runny; it has to stay on your toothbrush.Dip your toothbrush into the paste and use as you would regular commercial toothpaste.
And here are 50 more DIY beauty product ideas and recipes
